When we moved to Haiti, we missed our decade old baby Weber grill so much that we ended up bringing it with us to Haiti -- impressively packed by Paul's Dad in his suitcase. We debated admitting this embarrassing dependence, recognizing the ridiculousness of bringing our grill to Haiti. But wow, do we love to grill. Local oranges and herbs make a lovely punchy green marinade for these Orange Cilantro Grilled Chicken Skewers. "COOK!" "COOK!" .... "Mmmmmm!" Our 16-month-old daughter will proclaim as she urgently points to the stove around meal times. Our Madeline is both patient and persistent in her quest for food, and will next proceed to helpfully list all her favorite foods for us to cook, meat...blueberries...strawberries, with the ever present refrain; "COOK!" Yes, our daughter is a voracious carnivore who swings her little legs and claps her hands in delight when she gets meat for her meals. While my appetite has been weak lately, I have had an odd hankering for sweet and sour flavors. With this craving in mind, Paul has been working on this delicious and simple Honey Citrus Grilled Chicken, and it is a knock-out win for me!

Christmas in Indiana this year had as hankering for these Thai Peanut Smoked Chicken Wings. Given the challenges of finding both chicken wings and a smoker in Haiti, we couldn't pass up the opportunity to chow down on an old favorite while back in the US. This pungent Thai sauce is chock full of vibrant flavors, tangy lime, creamy peanut butter, garlic, and spicy jalapeno. For those without a home smoker, the recipe includes an easy adaptation for oven roasting.

One stand was serving grilled chicken in an addictive, slightly sweet peanut curry sauce. Maybe it was just the romance of the moment, but that flavor combo has stuck with us, and it's one we find ourselves coming back to in the heat of summer. Gourmet Hotdogs 3 Ways

Moving to Haiti, there were foods that we were expecting to forgo. Take dairy and berries, both are mainly imported, elusive, and outrageously expensive; makes sense. On the flip-side, some surprising things have been easy to find. Like hotdogs; they are everywhere. Hotdogs are tucked into pikliz stuffed breakfast pastries, fried on the street, and cooked into Haitian style gratin. Hotdogs were were even served to me at the maternity clinic, a few hours after giving birth to Madeline. In the spirit of hotdog season, we're sharing some of our top 3 Gourmet Hotdogs; where the standard ketchup, mustard, and relish are replaced by toppings inspired by our favorite sandwich combinations: the ReubenCubano and Bánh Mì.

Sweet & Spicy Sesame Wings

For us, the month of May means barbecue season, and with long weekend celebrations this month in Canada, the States, and National Flag day here in Haiti, we thought it was time for chicken wings. We first started making this addictive wings recipe last year when an abundance of hot pepper jelly made it into the fresh produce boxes of our CSA. Paul created these Sweet & Spicy Sesame Wings with a pungent sesame, garlic and fresh ginger sauce that is a slam dunk recipe to add to your grilling repertoire this season.

Chilmole Slow Roasted Spareribs

Yesterday, both Paul and my sister celebrated their birthdays. Food, as usual, is our vehicle of celebration with an office birthday lunch featuring Paul's favorite Haitian dish, kalalou, stewed okra with slow cooked beef. Unfortunately, an ocean separates us from celebrating with my sister this year, but we in Haiti will spend our weekend in food revelries! Paul has requested his usual quirky birthday-food combinations; buttermilk biscuitshot fudge pudding cake and watermelon chiffon pie, all fairly doable with minor adaptations. But this year he also requested ribs. Hmm. Since we have some gorgeous chilmole paste in our fridge right now, I am planning to make Paul a grilled version of our recipe for Yucatán Chilmole Slow Roasted Spareribs, a finger-licking rib recipe that we perfected in Pittsburgh before we left. Smoky, spicy, juicy, delicious.

Smokey Mexican Chile Paste, Chilmole

Last weekend, Rebecca and I moved into our permanent house here in Haiti. What a relief after months of transition. With food on the mind, our first order of business was setting up the grill! And yes, if you were wondering... it is the same grill we had in Pittsburgh for 8 years, lovingly disassembled and brought over in a suitcase by my MacGyver-of-a-father. As temperatures rise, there is just something special about grilled food. Maybe its that the smokey char reminds me of campfires and sleeping under the stars, maybe its just the uncomplicated joy of cooking over flames. For me, this Smokey Mexican Chile Paste is the closest thing there is to bottling all that is beautiful about grilling. Our non-traditional take on Mexican chilmole paste tempers the hard char of the classic black version, for a lighter, more fruity chili flavor. This paste is excellent for making red rice, a great base for barbecue sauces, a go-to rub for meats, and a potent flavor boost for chilis and other soups.

Spiced Roasted Garlic Butter

We are both great lovers of butter in all its forms. Since butter is a luxury product in Haiti running around $12 a pound, we feel like it deserves special treatment and the addition of roasted garlic and the warm, sweetly spiced, and earthy flavors Yucatán Spice Rub, Xac, takes things to a whole different level. In this flavorful butter, a base of roasted garlic is mixed with the pungent flavors of Mexican cinnamon, oregano, allspice, pepper, cloves, bay and cumin. Slather this on garlic bread, meat, fish, roasted vegetables...we haven't found a medium yet that doesn't benefit from this punchy butter.

Charred Garlic Salsa

To celebrate the garlic season, we've been eating batch after batch of this sweet, smokey, and nutty Charred Garlic Salsa. It's easy to slip into thinking of garlic as a year-round kitchen workhorse, rather than as a seasonal specialty worth savoring in its own right. If you've never paused to taste the difference between early summer's stale grocery garlic and the in-season local variety, this is the perfect vehicle to indulge. Charred Garlic Salsa is inspired by the flavors and techniques of Mexico's Yucatán Peninsula, and is delicious with chips, on bread, with grilled meats, tacos, or as an amazing condiment for sandwiches.

It’s the first day of September, an in-between season, with one foot in summer and the other inching towards fall. We created these Bison Bacon Burgers for this time of year, a last hurrah to warm summer grilling, with a nod towards cooler evenings. These are woodsy bison and beef burgers with hints of rosemary, smoky bacon and heaps of sweet caramelized onions. Honestly, these are fantastic burgers, bison lover or not, this burger will captivate your taste buds. And for the labor day weekend, celebrate with a last round of homemade burgers; Smokey Ancho Cheddar BurgersPortobello Burgers with Green Olive Tapenade, or, my favorite, Turkey Feta Burgers with Yogurt Curry Sauce.

Chimichurri Chicken Kabobs

Delicious meat cookery doesn't have to be complicated. In fact, with quality ingredients, it can be down-right simple. Our Chimichurri Chicken Kabobs start with moist and flavorful chicken thighs marinated and sauced with a jar of fresh and vibrant Argentinian chimichurri. Making your own chimchurri is easy. Raising your own chickens, on the other hand, and ensuring top flavor, moist meat, and ethical animal husbandry, requires a whole different level of DIY commitment. When sourcing your chicken here are my top 3 tips:

  1. Don't compromise freshness. As chicken ages under cellophane, its quality declines and the tender muscle fibers begin to lose both moisture and flavor. Similarly, each time meat is frozen and thawed, its texture and moistness is compromised. Buy the freshest meat you can find that has been stored carefully without freezing.
  2. Keep processing to a minimum. Each processing step risks compromising quality and increasing cost at the register. Try to avoid buying meat that has 'stuff' added or injected. As much as you are able, do your own processing (partitioning a whole chicken, deboning thighs, skinning breasts, doing your own grinding, etc.). Not only will this give you more control over your meat, it will give you 'extras' to freeze or use for unrivaled homemade broths and soups.
  3. Find a brand or farm you believe in. Animal husbandry is tricky business, and so is finding meat at your local grocery that you can feel good about. Understanding how each company balances issues of animal well-being, human health concerns, taste, texture, environmental impact, and cost, is generally not decipherable from the labels and buzzwords found on packaging. Do your research, it's easier than you think. 

With Rebecca out of town recently, I found myself on a quest to identify the best supermarket chicken.  I'm not even going to share how much chicken I single-handedly cooked and consumed, but a clear winner emerged. In a funny small world kind of way, it's a family business from my hometown: Miller Poultry. From classic roast chicken to smoked wings, from chicken schnitzel to Chimichurri Chicken Kabobs, this is can-do chicken! While Miller's can be found in many Whole Foods, I found that it is also available in our local Shop N'Save.

Heirloom Tomato Bruschetta with Queso Fresco

Normally tomatoes and I aren't close. I am that annoying person who picks them out of my salad and fishes tomatoes out of my sandwich, it's an embarrassing trait. This tomato avoidance changes each summer with the arrival of beautiful, sweet, summer tomatoes. This week we got two colorful striped heirloom tomatoes from our CSA and my tomato appetite returned with a vengeance. Paul had just pulled a grainy loaf of sourdough bread out of the oven, our basil plants were looking lush and prime for the picking, and so decided on bruschetta for dinner. We gobbled up a platter for an al fresco summer dinner.

Grilled Vegetable Soba Noodles with Rosemary Garlic Sauce

Cooking delicious food for guests with dietary preferences calls for creative use of the season's bounty. Our goal for a weeknight dinner with friends was a vegetarian, gluten-free main dish, using seasonal vegetables, ready in 30 minutes. After a visit to our local famers’ market, we set to work creating a vegetable based pasta dish with flavor and texture that would appeal to a wide range of eaters. To make Grilled Vegetable Soba Noodles with Rosemary Garlic Sauce, we grilled up fresh broccoli, cauliflower, green beans and zucchini. With a roasted garlic sauce in mind, we added whole garlic cloves to the grill, to see if we couldn’t achieve a roasted garlic flavor without turning on the oven. It worked brilliantly. While the vegetables and garlic grilled, we cooked up a quick batch of buckwheat soba noodles, a toothsome noodle that is also gluten free and cooks in 4 minutes. For a subtle sauce that would accompany the dish without overpowering the fresh flavors, we clipped some rosemary from our garden, added our grill-roasted garlic, a flurry of nutty parmesan cheese, and bright lemon for contrast. Enjoy summer vegetables and homespun food shared with the ones you love.

4th of July Grilling Favorites

It is a holiday week in both our home countries (Canada and the US), and we are celebrating with family and food. We've put together a collection of our most popular grilling recipes to inspire your summer cooking. Check out Paul's fantastic spelt flatbread on the grill, or my favorite Grilled Greek Salad with delicious caramelized halloumi cheese, our flavor loaded burgers; turkey fetacheddar ancho or portobello, or, if you just need a change from plain old hotdogs, ditch the bun and make loaded hotdogs!  We hope you have a chance to share delicious smoky foods with the people you love this weekend!

Loaded Hotdogs

It’s a holiday week, and we’re eating hotdogs. To be honest, hotdogs have long been a favorite of mine, and our freezer is stockpiled, prepper-style, in case of a global shortage. We got sick of the soggy, too large buns and obvious condiments, and for this grilling season we’ve gotten creative and kicked out the bun, brought on the tortilla, and seriously ramped up the flavors for gourmet Loaded Hotdogs. We wanted to share our favorite flavor combination; where ketchup and mustard are supplanted by tart homemade quick pickled red onions, tangy guacamole, creamy queso fresco cheese, and if you are feeling decadent, crispy bacon.

Grilled Greek Salad

Grilling is our cooking method of choice for these early summer days, but it's not all about the meat.  Actually, our summer diet has tilted vegetarian since we started making this Grilled Greek Salad. I dreamt up this colorful dish in the colder months, with longings of summer. This salad knocked our socks off and had my meat loving husband requesting more. We made Grilled Greek Salad through bitter March sleet, April winds, and May rains. And now finally, with seasonal vegetables and balmy temperatures, we can grill in the sunshine. Unlike some grilled salads, this isn't grilling for cuteness. Grilled Greek Salad is a hefty, hearty entree salad, that relies on the grill to give the peppers, onions, and tomatoes their luscious char, and to add caramel sweetness to tangy halloumi cheese. Topped with kalamata olives and a tart lemon-zest vinaigrette for contrast, this salad is dynamic. Halloumi, for those not familiar, is a hard salty sheep-milk cheese from Cyrpus, a great cooking cheese that keeps its shape and texture at high heats.
